I've always been fascinated by the Philosopher's stone. Alchemists never reveal the nature of the substance needed to create the Philosopher's stone, writing only that it's freely available. Is it a stone? A stone that isn't a stone? The whole process is secret, unless you happen to be able to understand the old manuscripts. Which, sadly, I don't. I still love studying them, though.
